098 - Peel

PEELS were used to slide loaves of bread in the stone oven. It was one of the oven utensils, along with the iron crook, the “routa” and the oven fork. The process started by burning wood in the oven. The oven fork was used for stacking wood and branches inside the oven. When the branches were on fire and became coal, they were carefully pulled aside with an iron crook and the inside was cleaned of the ashes with the “routa”, a cloth fixed at the edge of a wood. In the end, the kneaded loaves, which had been left to “swell”, were shoveled with the peel in the oven.
